I promise this is easy.
This works for my CSID guys because they can tolerate some starch when served with fat/protein. It's egg free, and if you use Cheerios brand cereal, it is gluten free too! The chocolate recipe is adapted from Chocolate Covered Katie. (I love her.)
Ingredients
- One box of cheerios, divided
Peanut Butter:
- 1 1/2 cup natural peanut butter
- 1/2 cup honey or corn syrup
- 1/2 stick of butter
Chocolate:
- 1/2c + 1T cocoa powder
- 4 T coconut oil
- 3 packets of stevia
- 1/2 c dextrose
In a microwave bowl, place PB, honey and butter. Microwave for one minute, then stir until butter is completely melted. Pour over 1/2 box of cheerios and mix until well coated. Spread on lined cookie sheet to cool.
In a double broiler (or in a mixing bowl over a pot of simmering water), mix cocoa, oil, and stevia. Pour 1/2 of chocolate mix over the cereal, toss. Dust with half of the dextrose, toss. Pour remaining chocolate over the cereal, toss until well coated. Dust with remaining dextrose, toss. (This will help the chocolate not melt all over little toddler hands on contact and make it sweeter.) Spread on lined cookie sheet to cool.
Once cooled, mix the cereal together and enjoy.
Yummy CSID friendly add ins include raisins, nuts, pomegranates, homemade marshmallows (chopped small), but I am keeping it simple (and toddler friendly) this year.
