Dandelion Jelly

Who even knew this was a thing? I found a list of floral jellies that looked lovely and adaptable for CSID and dandelion jelly was on the list. It tastes like honey and lemon and sunshine.

Avocado Ranch Chicken Salad Wrap (CSID lunch)

We are on week 3 of the induction diet for CSID (Congenital Sucrase-Isomaltase Deffiency). One more week and we can start Sucraid and will have more food options. But in the meantime, I am getting bored serving the same lunches over and over. Today I wanted eggless chicken salad (I am allergic) and came up with Avacado Ranch Chicken Salad Wrap. It was really tasty!

Found Fruit Salad.

I promise this isn't (too) gross. Really.

I like to leave out a bowl of fruit in the dining room for snacks and to have a visual aid for the Personal Assistant when allowing him to select his fruit for breakfast or lunch. He loves it. Unfortunately, he is growing, and can now reach the fruit bowl himself, which really wasn't an issue until I found this:

Found Food - 2

I got so excited to see Jen post about "found food" because this is one of the ways I have started saving money as well.  I have a freezer full of "bits and scraps" that are actually very useful.  I think this might be a continuous topic as we continue to find food.  My husband sometimes looks in the freezer with exasperation..."Seriously?  Broccoli STEMS?  Where is the pizza?"

"Found" Food

What if I told you that you could make a meal for your family for under $2, would you believe me?
